Carrot Cake for a Soldier’s Birthday
Yesterday 27th August 2025 I baked a cake that carries more meaning than any other — Gary’s Carrot and Walnut Cake.
It’s more than just flour, sugar, carrots, and nuts. It’s memory, it’s love, it’s proof. Every stir of the spoon was for him, my soldier, my chef, my daft Yorkshire nutter who would’ve teased me about dropping crumbs on the counter.
The cream cheese icing, might not be Michelin-star smooth, but it’s real — made with love, just as he likes it. When I cut the first slice, I whispered “Happy Birthday, my darling.” And in that moment, I felt him. Not in some distant dream, but close — like he was reaching out for his piece of cake, cheeky grin on his face, ready with a joke.
I know he saw it. Just like I know he feels the love that sits in every fold of icing and every bite of sweetness. Because what’s shared between us never dies.
So here it is, world — my proof of love in sponge form. One cake, one heart, one birthday wish for the man who still makes my world spin:
